Uganda – Katogo

Katogo is one of the most famous breakfasts of UGANDA. Katogo is called the POOR’s MAN MEAL because it is only the combination of few ingredients like Cassava and beans. When the Ugandans started cooking katogo, there is no doubt that matooke, like katogo. In this case, the production of iron ceramic pots in the form of wood or charcoal is a long or difficult process. Katogo is the best food in Uganda, especially in Kampala.

The city has different tribes in different parts of the country, but when it comes to breakfast, everyone agrees on two things, Katogo or Kikomandu. Katogo is a dish where a large plate is cooked in the same dish and sauce, which is common in all parts of Uganda. It’s usually nuts, Irish potatoes, cassava, or sweet potatoes, while the sauce is meat or vegetables, beans, peas, nuts, or vegetables. Combining different ingredients for lunch or dinner is one of the most popular breakfast options. Bananas come in a variety of colors, commonly called matoke. Food is said to satisfy your daily hunger.

The English meaning of “KATGO” is “MIX”, they just mix cassava and beans and make their dish ready.

BAGANDA

Baganda is a group of people which is also called the Ganda people, they lived in the subnational kingdom of Uganda. They actually consist of more than 50 clans. There are 5.56 million people are present in Uganda. The native language of the people is LUGANDA

ORIGINATION

The ORIGINATION of KATOGO is from two countries Western Uganda and Buganda. Buganda is the first place where Katogo was made by the combination of two ingredients Matooke and Offal. With time the recipe of Katogo was replaced by some special sauces that made it for rich people but the actual taste of Katogo is the combination of Cassava and beans.

OFFAL

Offal is a part of the meat that is boneless and of different species like a lamb, mutton, pork, etc.

MATOKE

Matoke is just like a banana but it is green in color and called plantains. They are used in different variety of dishes in Uganda. Matoke is the name given to a plant in Uganda and the eastern part of Africa. Matok is a type of plant that is used green or yellow and is widely used in cooking. This food is important and an important crop in East Africa.

CASSAVA

Cassava is a very famous ingredient of Uganda, which is used in different varieties of dishes like snow skin, brown skin and 2 cm long and 8 cm long. Other names for Yuka are Yuka, Cassava, Manyuk, Cassava and Tapioca. Although yuka is sometimes mispronounced, yuka is a unique and beautiful plant.

VARIETIES

There are two varieties of cassava

  • Sweet
  • Bitter

BYENDA Sauce

Byenda is actually called OFFAL and it is the inner lining of the stomach, it is actually tripe and sweetbreads. Offal is called Garbage because no one uses this in their meal and falls into the garbage, still many people don’t know that you can use this in your meal after cleaning this. You can use it by cleaning it.

BANANA CULTIVARS

Banana is one of the most popular crops, which is present in KENYA. They are grown in different regions and areas according to their suitable environment. The first crop of bananas takes almost 15 months to ripen properly.

VARIATIONS

There are different kinds of variations you can do in your dish like you can add following ingredients in your dish

RECIPE

INGREDIENTS

  • banana
  • oil
  • salt
  • onions
  • pepper
  • tomatoes
  • cumin seeds
  • coriander
  • hoho
  • coconut milk

METHOD

  • Add oil in the pan.
  • Heated the oil and then add chopped onions to it.
  • Add tomatoes after frying the onions.
  • add casava in the water and boiled it.
  • add all the spices.
  • Add beans in it and boiled it more.
  • leave it for 20 minutes.
  • your dish is ready.
