Turkey – Pide

Introduction

Pide is the most famous and local cuisine of Turkey. This is a flatbread kind of dish which has the shape same as the shape of a boat, and it is baked in an oven. Pide has become the most important and delicious cuisine of Turkey its various varieties are spread all over Turkey and other eastern countries. Pide is a dish that is baked in an oven and it gives a feel like pizza. It is sometimes a doughy meat pie recipe which is when baked gives you a delicious flavor and delicious taste. The main components of this dish are beef and cheese. Beef and cheese make this dish healthier and tastier. Making pide is easier than you think, anyone can make it without any difficulty. Most of the people of Turkey like this dish not just because of its taste but also because of its health advantages. This dish has great popularity among children. As we know that children like to eat pizza and other fast foods. So Pide gives you the best feel of pizza as both these dishes contain cheese which gives them the same taste. Many Turkish restaurants also offer this local cuisine. I’ve made this dish the same as which are offered in restaurants. If you want to make this dish at home, you just have to follow these steps which I’ve given below. I’m sure you’ll like this flatbread looking dish.

Traditional Dish

Talking about the traditional and cultural side of a pide, it is a traditional cuisine that comes from Turkey but it feels like cuisines such as Italian pizza or Middle Eastern flatbreads and other Asian pizzas. I would like to tell you that, a traditional pide contains no sauce in it, but there are many toppings on the top of it just like a pizza. Talking about the base of pride, it contains meat, vegetables, and spices for flavor in its base. There are two common ways of serving a common Pide, one is pide can be served with an egg on top and the other which I’ve mentioned. My recipe doesn’t have any egg on top of it, but it’s totally up to you, you can do it for your taste. Now talking about its shape, it has a very unique and simple kind of shape which has a delicious crust in the base of the bread. So it is a traditional dish which is like by many people all over the country.

History Of Pide

Pide was first made in the decade of 1850s. It was first made because of the experiments of some bakers who were located in the small town of Bafra, on the Black Sea. So you can say that Pide has been originated from Black Sea, which is a part of Turkey. So talking about the experiment of he baker, they started stuffing their bread before baking it which helps them to understand. It was a simply stuffed bread which was baked. But now Pide can be made with delicious toppings like cheese and also it contains beef.

Ingredients

Ingredients for preparing Dough

  • 1 tbs Butter melted
  • 1 Egg
  • 1 cup Water warm
  • 3 Cups All-purpose flour
  • ½ tsp Salt
  • 1 & ½ tsp Instant yeast
  • 2 tsp Sugar
  • Oil 2 tbs
  • ¼ Cup Water warm or as required

Ingredients for filling beef

  • 1 tsp black pepper powder
  • ½ tsp Salt or to taste
  • 1 medium Onion finely chopped
  • 2 tbs Garlic crushed
  • 400 gms Beef mince
  • 1 large Tomato finely chopped
  • ¼ Cup Fresh coriander chopped
  • 1 tsp Cumin powder
  • 1 tsp Red chili crushed
  • ½ tsp Sumac powder
  • Black sesame seeds to sprinkle

Ingredients for cheese filing

  • Mixed herbs to sprinkle
  • Nigella seeds to sprinkle
  • ½ Cup Cheddar cheese grated or as required
  • ½ Cup Mozzarella cheese grated or as required
  • crushed Red chili to sprinkle

Directions

Directions for preparing dough

  • In the very first step take a small jug and add 1 & ½ tsp instant yeast, 2 tsp sugar, 1 cup warm water in it and mix it well then cover it and set it aside for 15 minutes.
  • Now take a bowl and add 3 cups of In all-purpose flour in it and then add 1/2 tsp salt, 2tsp oil in it and then mix it well.
  • After that add the above yeast mixture into it and again mix it well.
  • After mixing it now slowly add 1/4 cup warm water in it and knead it to make a dough, now cover it with the help of a lid and let it rest for 2-3 hours.
  • Now take a bowl, and add 1 tsp butter and 1 egg in it, and then mix well and set aside.

Directions for beef filling

  • For making beef filling take a bowl and add 400 gms beef mince, 1 large chopped tomato, 1 medium chopped onion, 2 tsp garlic, 1/4 cup fresh coriander, 1 tsp cumin powder, 1 tsp black pepper powder, 1/2 tsp salt, 1/2 tsp sumac powder, and 1 tsp red chili crushed in it and mix it well and marinate it for 30 minutes.
  • Now, sprinkle some flour on a plain surface and knead the dough again for some time.
  • After that cut that dough into pieces according to the size which is given in the picture below and then sprinkle some flour on it and roll it out in oval shape with the help of a rolling pin.
  • Now after rolling it out take a baking tray and again sprinkle flour on the top of it and place the dough which is rolled out and then add marinated beef mixture on it and spread the mixture according to its size.
  • Now fold the edges of the dough and make it in the shape of a boat.
  • Brush the edges of the dough with the mixture of egg and butter and then sprinkle black sesame seeds on it.
  • And in the very last step bake this dough for 30 minutes in a preheated oven at 200 degrees Celsius until it changes its color to a golden brown.
  • Take it out after 30 minutes and when it cools down cut it into slices.
  • Your delicious Pide is ready to serve.

Directions for filling cheese

  • Take a baking tray and sprinkle some flour on it and place the rolled dough on it.
  • After that add 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese, crushed red chili, and mixed herbs on it.
  • And again fold the edges of it as you’ve done before and just like above make a boat shape of this dough.
  • After that brush the edges of the dough with an egg and butter mixture and sprinkle nigella seeds on it as you’ve done before.
  • And in the very last step bake this dough for 30 minutes in a preheated oven at 200 degrees Celsius until it changes its color to a golden brown.
  • Take it out after 30 minutes and when it cools down cut it into slices.
  • Your delicious Pide is ready to serve.
