Pakistan – Traditional Kunna Gosht with Khameri Roti

Kunna gosht is one of the top dishes in Pakistan. The way of making it attracts people. It has a unique way of making. It is cooked in a clay pot. It is cooked below ground level. It is cooked with a lot of spicy masalas. The other name of kunna gosht in matka gosht. You can use mutton or beef to make this yummy dish. This dish can be served on weddings and gatherings etc. This dish is specialty of Faisalabad and the unique aroma makes you drool. This dish has a earthy smell which makes it more special.

It is different from all the dishes. It is cooked on low heat for 5 to 6 hours and has melt- in- the- mouth texture. It includes meat, onions, tomatoes, green chili, spices, garlic, ginger etc.

You can eat it with naan, chapati, bread, buns etc but khameri roti is the best choice.khameri roti usually cook in tandoor which makes it special nut some people cook it on tawa. Roti is a usually a flat -round bread. Roti is must have with any curry or salan. It consumed in many countries.

Ingredients for making kunna gosht

  • Mutton 2 kg
  • ghee 1 cup
  • onion 1 large
  • coriander 1 tbsp
  • red chili flakes 2 tbsp
  • yogurt 1 cup
  • turmeric 1 tsp
  • ginger paste 1 tsp
  • garlic paste tsp
  • cardamom 5
  • black pepper crushed 1/2 tsp
  • green chili 6
  • cinnamon stick 2
  • cumin 2 tbsp
  • mutton stock 100 gram
  • salt 2 tbsp
  • tomato 1

Method of cooking

Step 1

Take a pan and ghee, cardamom,black pepper, cinnamon stick,cloves and green chili and saute for 10 minutes.

Step 2

when the mixture is golden brown add ginger paste, garlic paste and tomatoes in the pan and again cook for 10 minutes.

Step 3

Now add mutton, salt, coriander, red chili, turmeric, cumin and fry until all the spices are dark brown.

Step 4

Now add yogurt and stir the masala and fry for 5 minutes after five minutes add the mutton stock to the spices and then cover the lid and cook for 20 minutes until the gravy is thicken.Now garnish it with some green chili, and green coriander.

Ingredients for making khameri roti

  • Plain flour 2 cups
  • yeast 2 tbsp
  • sugar 1 tbsp
  • water 1 cup
  • milk 3 tbsp
  • oil 2 tsp
  • seasame seeds 1 tbsp
  • baking soda 1 tsp
  • flour 1 tsp

Method of cooking

Step 1

Take a bowl and add yeast, sugar,1 tsp of flour, water and baking soda.Mix well.

Step 2

Take another bowl and 2 cup of flour, oil, milk and the mixture the we prepared.Combine it together until the dough is formed.Rest the dough for 3 hours.

Step 3

Take a small bowl and roll it with the rolling pin until a round roti is formed.When the roti is formes sprinkle some seasame seeds on top.Toast the roti on a tawa and ccok until golden brown.Roti is ready.
