Pakistan – Traditional Goshtaba (Kashmir Special)

Introduction

Goshtaba is the specialty of Kashmiri cuisine.Goshtaba is a large meatball cooked in yogurt and different types of spices. This dish is served to Mughal king and queens and it is also known as royal dish. It is served on special occasions. The meat balls are spicy and the gravy is sour this combination people love. Some people eat it with rice but i prefer naan to eat with goshtaba the naan is simple and the goshtaba is flavorful which i love.This is famous in winters.

This is served in a large copper platter which includes goshtaba, rice, chapati, salad and raita (sauce).The way of cooking is very unique.In Kashmir all meals are end with a plate of goshtaba.The meat is tender and has melt-in-the-mouth texture and the gravy is smooth and delicious.The way of eating is also very unique.

Ingredients

  • Mutton 2 kg minced
  • oil 5 tbsp
  • coriander 3 tbsp
  • cumin crushed 1 tbsp
  • cloves 6
  • bay leaves 3 to 6
  • butter 3 tbsp
  • yogurt 2 cups
  • milk 1 cup
  • onions 2 chopped
  • salt 3 tbsp
  • tomatoes 3 chopped

Method of cooking

Step 1

Take a bowl and add mutton, slat, butter and oil mix well and keep it aside.Now take a piece of cloth and add bay leaves ,cloves ,cumin,coriander and tie it.Now take a cooking pot and add 3 glass of water and take a small ball of mutton and put it in the boiling water and boil for 30 minutes.When the meat is cooked add the spices pouch in the water and again boil for 10 minutes.

Step 2

Now add the yogurt in the pot and cooked until the thick gravy is form.Then remove the spices pouch and serve with naan or rice and garnish with some lemon juice.
