Pakistan – Pakistani Traditional Snack Katlama

PAKISTANI SNACKS

Pakistani snacks are usually spicy and fried things that can be homemade or ready made variety.

It may be a part of cuisine but is very popular all around Pakistan. It may be eaten in the morning or evening like tea time snack or after dinner as a supper. These traditional snacks like samosa, pakora, nimko and katlama are sold by famous bakeries or even by hawkers on the road side.

WHAT IS KATLAMA?

Katlama is visually like desi version of pizza, also known as ‘’POOR MAN’S PIZZA’’. It is right to say that a gigantic flat bread with traditional Pakistani seasoning. It a savoury snack where a dough is prepared and flattened up like pizza and covered with spiced chickpea flour or any lentils and seasoning. Its base of dough is like pizza but topping is different and actually it is deep fried into oil.

KATMALA IN PAKISTAN

In Pakistan katlama is a snack of Lahore, it is a traditional Punjabi snack. Whenever you think about traditions of Lahore, katlama is a thing that comes over the mind. On special occasion like eid and shabrat or in Ramzan, large sized katlama is sold very large around 2 to 3 feet. And everybody is just taking small portion of it on 50 rupees and enjoy. It is also served on top Pakistani restaurants as a side dish or starter. It is eaten up with chutney or raita. On rainy days hands with a cup of tea and spicy katlama just take ourselves to heaven.

INGREDIENTS

  • 1 cup Wheat Flour
  • 1 cup plain flour
  • 2 tbsp Cooking Oil
  • 1 cup Water
  • 2 Eggs (Egg White)
  • 1 cup Gram Flour
  • Salt (As Needed)
  • 1 tsp yellow food color
  • 1 tbsp Red Chili Powder
  • 1 tsp Cumin seeds
  • 1 tsp green chilies
  • 1 tbsp fresh coriander
  • 1 tsp Coriander Powder
  • 1 tbsp Kasoori Methi (dried fenugreek)
  • 2 tbsp Mung Bean
  • 1 tbsp dried Pomegranate Seeds
  • 1 tsp chat masala

METHOD

  1. In a bowl, add wheat flour, plain flour, cooking oil, water and mix them and prepare a dough , then keep the dough in the refrigerator for 15 minutes
  2. In another bowl, add gram flour, salt, red chili powder, cumin powder, coriander powder, kasoori methi, egg white, mung beans, chat masala and blend them, then prepare a thick paste
  3. Now, roll out the dough with rolling pin, and add a thick layer of paste over it with pomegranate seeds and any lentils (optional) and let it fry.
  4. Enjoy the Lahori snack anywhere in the world.
