Pakistan – Masala Bhare Baingan

INTRODUCTION

Masala Bhare Baingan is a recipe whose base is baingain. Baingain is an Urdu word and it is a name of vegetable. In English it is called as Brinjal or Eggplant. In this recipe we fill eggplant with stuff.

INGREDIENTS

  • Eggplant = Half kilogram
  • Almonds = 20
  • Mustard Oil = 125 Gram
  • Cumin Seeds = 1 Tablespoon
  • Coriander = 1 Tablespoon
  • Crushed Coconut = 1 Spoon
  • Poppy Seeds = 1 Spoon
  • Salt = 1 Tablespoon
  • Crushed Red Chili = 1.5 Tablespoon
  • Custody = 1 Tablespoon
  • Onion = 200 Gram
  • Tamarind = 65 Gram

PROCEDURE

Take 65 gram tamarind in 1 cup water. Eggplants should be small, fresh and round shaped. Heat up oil and put the given quantity of almonds, crushed coconut, poppy seeds, coriander, onion, salt and crushed red chili. Fry the mixture and chop it. Let the remaining heated oil in the pot. Cut the eggplant through the stalk but don’t cut the eggplant through bottom. Also take care to not cut the stalk of eggplant. Now fill the eggplant with the stuff that you fried before in oil. Make sure to fill the stuff with spoon. After filling the eggplant add tamarind water in the filled eggplant. Now put the filled eggplant, remaining tamarind water, curry leaf and cumin seeds in the pot contain hot oil. Put it under pressure and wait for 1 hour. After 1 hour check the eggplants become soft or not. If the eggplants become soft take out all eggplants with mixture and serve it with almonds. Masala Bhare Baingan is ready.

HOW TO SERVE?

Serve this dish with rice and according to the given quantity 6 people can eat this dish.
