Pakistan – Lahori Charga (Whole Chicken Fry)

INTRODUCTION

The word ”Charga” comes from the meaning whole chicken when spiced up and steam it make it moisture and juicy and than fried to give the crispy touch to it. This dish is so popular in the Lahore region of Punjab, Pakistan so it name like Lahori charga.

Whole chicken is first marinated with the traditional spices than let it rest in the spices so the spices and salt move inside the chicken meat and make it flavorful more from the inside than steaming is used to make it tendered and at last frying is done of the whole chicken to make is crispier and yummier.

STREET FOOD IN PUNJAB

Street food of Pakistan especially in Punjab, Lahore. Every thing that is famous by the name of Lahore is street food and the unique way to serve it like with fries, bread and special masala.

In the food street Lahore, special plate is made of charga where chicken pieces are cut and served with fries to enjoy the dinner, make to reached to the heaven.

HISTORY

it is said that this dish is the invention of the Mughal era where after the British and some evolution according to the taste this dish is known as CHARGA after division of Subcontinent.

INGREDIENTS

  • 2 kg whole chicken
  • 2 tbsp salt
  • 2 tbsp red pepper
  • 1 tbsp cumin powder
  • 3 tbsp chat masala
  • 3 tbsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red color
  • 6 tbsp yogurt
  • 6 tbsp cream
  • 6 tbsp lemon juice
  • 4 tbsp garlic paste
  • 6 tbsp ginger paste
  • 3 tbsp green chili paste
  • oil for frying
  • potato for fries

METHOD

  • Take a whole chicken and cut on the sides of the chicken to make it tender form the inside.
  • Now in a separate bowl add all the ingredients and make a thick paste.
  • Place all the thick mixture over the chicken and let it rest in the spices for 3 to 4 hours.
  • Now after that its time to steam the chicken for 15 minutes.
  • After that fry the chicken and serve it with fries.
  • Enjoy!
