Pakistan – Delicious Kashmiri Roghan Josh

About the dish

Roghan josh is a royal dish. It is served to ”the mughal kings”. This dish is the specialty of Kashmir. This is the combination of roasted lamb and thick spicy gravy. The meat has melt-in-the-mouth texture and the gravy is so appetizing. The meat is cooked in butter to give it a rich and tasty flavor. In Kashmir it is prepared by adding caramalized onions, garlic, ginger and lots of spices. Kashmiri red chili is added to the dish to give it a red colour.

The aroma of this dish is so appetizing.This is a must try dish when somebody visit to Pakistan.People eat this with rice, naan or chapati.`The beautiful state of Kashmir is not only famous because of its beauty but it is more famous because of its yummy dishes.The aroma of Kashmiri cuisine is out of the world.

Ingredients

  • mutton small cubes 2 kg
  • cinnamon sticks 3
  • cardamom 10
  • ginger paste 1 tsp
  • garlic paste 1 tsp
  • yogurt 1 cup
  • salt 1 tbsp
  • water as required
  • milk 1/2 cup
  • butter 1 cup
  • cumin 3 tsp
  • crushed chili 2 tsp
  • green coriander 1 tsp
  • wheat flour 2 tbsp

Method of cooking

  • Take a large cooking pot and add water, wheat flour,salt, yogurt,ginger paste, garlic paste,cardamom,cinnamon and cook for 15 to 30 minutes until the gravy is thicken.
  • Now take a pan and add mutton cubes and butter and saute for 20 minutes then add milk,cumin,crushed chili and green coriander and fry for 20 to 40 minutes.
  • When the gravy is cooked add the mutton in the gravy cooking pot and mix well.Now cook it for 1 hour on low flame.
  • The yummy dish is ready. Garnish it with some green coriander and serve with rice or naan.
