Nepal – Gundruk Ko Achar

There are many national cuisines of Nepal but some of them are the best that we can eat with anything, it is one of the best dishes of Nepal cuisine. It is the pickle of gundruk which is made with different types of leaves that make it easy. This is the one that can be eaten with rice, roti, naan, or any other type of dish. We can eat gundruk ko pickle with many dishes because it contains any type of leaves like

  • green mustard
  • cauliflower
  • radish leaves

There are two type of thing that we can make with it, it is simple and super easy like

  • Gundruk ko jhol ( soup )
  • Gundruk ko achar ( pickle )

It tastes so good with rice, any type of rice or anything which makes good when you eat with pickle. Most people only eat chappati with pickle. Gundruk is also known as an appetizer so this pickle is very tasty and full of minerals which are very beneficial for the human body. We should eat this with all possible dishes.

This pickle is famous all around the world but especially in NEPAL, TIBET, INDIA, BHUTAN and many more but these countries/regions eat it as much as they can.

These dried fermented green leaves are actually made by the drying mustard leaves and many more leaves but mustard leaves are confirmed to use it, without these leaves they are incomplete. There is a very tangy flavor smell when we ferment this. These are helpful to eat in the dry and in the winter season.

WHAT IS GUNDRUK?

gundruk is actually a green leafy vegetable that is fermented. It is famous in Nepal especially. This is one of the popular ingredients of National cuisine. Gundruk is full of minerals and we can use it as an appetizer also. This is not only famous in Nepal but also in many countries, this leaf is eaten as an appetizer or used as a famous ingredient in our dishes.

RECIPE

INGREDIENTS

  • Gundruk
  • Onion
  • ginger
  • garlic
  • Spring onion
  • mustard oil
  • Fenugreek seeds
  • coriander
  • Turmeric powder
  • cumin powder
  • Soybean
  • red chili powder
  • green chilies
  • Salt

METHOD

  • Gundruks are leaves so we have to soak them in the water so they must be crushed.
  • Soybeans are also hard so you have to soak them in water.
  • Grind all the tomatoes, after boiling.
  • Chopped the onions, garlic, ginger, and all other ingredients.
  • Add oil to it.
  • And put all the spices in it.
  • Mix all the ingredients and leave it for few hours.
  • After that your pickle is ready.
