Japan – Yakitori

YAKITORI is a very famous and popular dish among food lovers in Japan. It is non Vegetarian dish made up especially from chicken and served with sauces like Tahini sauce, soya sauce, and Tare sauce. This meat dish is cooked in a unique way like grilling and bar b que .

KUSHIYAKI is a term used in Japan for grilling and stirring. So this chicken is marinated and then Khushiyahi on charcoal. Chicken is skewered in the sticks known as skewers.

KHUSHIYAKI TECHNIQUE

Kushiyaki is a term used instead of using skewered or grilling. In Japan, this technique is used in making many dishes. Meat or vegetables, both can be cooked on charcoal using this special Japanese technique.

Yakitori and kushiyaki are both things interchangeable. Yakitori is a dish in which chicken is grilled and kushiyaki is the technique used in making this dish.

Grilling charcoal stand or Yakitori device is used to making this grilled dish.

THIS DISH IS SERVED WITH TARE SAUCE :

TARE SAUCE

Tare sauce is the grilling sauce that is used to dripping the sauce over grilled skewers. It is used in many soups, grilled chicken, vegetables and to enhance the flavors of the dish. This is sweet but salty and tangy thick textured sauce

KUROMITSU

Thick soya sauce which is sweet in taste.

MARINATION/ SEASONING

This chicken skewers are marinated in seasoning to make it two flavored :

SALTY

In salty chicken skewers, only lemon juice and salt with some chopped garlic are used to marinate and than just grilled the chicken over charcoal and served with tare sauce.

SWEET AND SALTY

In this chicken skewers, mirin, salt, soya sauce and sugar is used to make it little salty and sweet touch.

SKEWERS

Skewers are thin metal or wooden sticks. This skewers are used to hold the things to made skewer, like chicken, vegetables etc.

INGREDIENTS

  • Chicken 500 grams ( small pieces )
  • salt 1 teaspoon
  • green onions 1 ( chopped )
  • Oil for drizzling

TARE SAUCE

  • soya sauce 1 cup
  • mirin 1 cup
  • sake 1/4 cup
  • salt 1/4 teaspoon
  • sugar 1 tablespoon

COOKING

  • Take chicken pieces on the skewers and set 4 to 6 pieces on the skewers.
  • now drizzle some salt and oil over the chicken and grill it over yakitori device/ charcoal stand
  • Let it a rest a side when cooked properly.
  • Cook tare sauce by adding all things together and cook for 10 minutes, until thickened.
  • Drip the sauce over chickn and its ready to serve.
