Japan – Osechi RAYORI ( New year’s Feast )

NEW YEAR’s JAPANESE LUCKY TRADITION, FEAST
Whenever Japanese cuisine comes into mind, ”OSECHI CUISINE” is one of the famous and of the tradition of Japan. OSECHI is a typical Japanese new year’s feast to welcome with the greetings. The food of different types is served in the special traditional boxes known as JUBAKO. This is a type of stack boxes, must be placed inside the stack after the use.
ORIGIN OF OSECHI
TSUBUKU, is actually a founder of this dietary cuisine. The traditional way to celebrate Japanese cuisine’s idea is given by Tsubuku.
The main dish of this special feast is ZONI. Zoni is a specially formulated rice dish. Rice cake is given with the soup made up from different vegetables. People here in Japan things that these two ingredients: rice and vegetables are God’s ingredients. And they served this main dish, ZONI on the new year to GOD.
With the evolution of time, this cuisine is also evolved and now many other food items are included in this OSECHI CUISINE. Now egg rolls, fish cake, prawn, black beans, and even mashed nets are served.

- Pounded burdock root
- Kuri kinton
- Black beans
- Kombu kelp roll
- Kamaboko, fish paste
- Kohaku, white and red vegetables
COOKING TECHNIQUES USED IN THIS DISH
OSECHI RAYORI INGREDIENTS
Actually, a sweet rolled up omelets :
- Egg : 2
- hanpens : 50 grams
- mirins : 2 tablespoons
- cane sugar : 2 tablespoons
Now take up the eggs beat them all ingredients into blender. And cooked into oven on flat plate at about 200 degree Celsius for 10 minutes. Roll up with the bamboo stick and set into the box.
Mashed cheat nuts with sweet potatoes :
- Japanese sweet potatoes : 2
- chest nut heavy syrup : 1 cup
- sugar : 4 tablespoons
- mirin : 1 teaspoon
- sea salt: a pinch
Add boiled sweet potatoes and mashed them. In a pot add mashed potatoes and all the ingredients into low heat and stir until they assembled. Now let it cool down for serving
BOILED BLACK SOYA BEANS
Just boil soya beans into water and salt. and served it on Osechi box.
