Cameroon – Sauce de Porc and Boiled Plantains

Sauce de porc and ripe plantains is a delicious meal made from pork and plantains. The sauce is made in the form of pepper soup but it’s somehow thicker and oily than pepper soup. This sauce is accompanied with boiled plantains either ripe or unripe, boiled white, yellow and water yams, potatoes as well as cocoyam. It can also be eaten with cassava and rice not forgetting garri. This dish can be seen commonly prepared by the people of the rest region and the littoral region of Cameroon. But since its common in towns, almost all inhabitants in any of these towns loves and prepares this dish except for those who don’t consume pork either because they consider it as a dirty animal or because of religious restrictions. This meal can be costly to prepare as well as it can be cheap. It all depends on the quantity one intents to prepare and the ingredients used. Since pork is very common in the west region, this dish is considered a cheap meal for them as compared to those in other towns as pork price increases as they leaves the west region to other regions of the country. But all in one, sauce de pork and ripe plantains is not only delicious but nutritious and mouth watery.

Cooking method

Sauce de pork and ripe plantains is prepared by boiling

Cooking ingredients

  • 1 kilogram of pork
  • 10 fingers of plantains
  • Half a liter of groundnut oil
  • 1 large onions
  • 20 grains of njansang
  • 2 sticks of cloves
  • “4 corner”
  • White pepper
  • Black pepper
  • Eye rice
  • Stick matches
  • Roundel
  • Pepep
  • Bush pepper
  • Green spices
  • Salt and maggi to taste

Cooking process

  • Wash the pork and cut into desired slices
  • Put in a pot and add a liter of water
  • Add some salt , maggi and onions and take to the boil
  • Allow to cook until the pork is ready
  • Slice onions and mix with all the other spices and grind
  • When the spices have been blended, remove and add a bit of water to it and stir to make sure there are no lumps
  • Add water to the pork on the fire and now add all the spices and stir well
  • Add maggi and salt and cover the pot for 5 minutes
  • Now add the groundnut oil to the content in the pot and stir
  • Allow to cook until all the water has dried up and just a thick oily soup is left
  • Sauce de porc is ready
  • Remove and put in a clean warm serving dish
  • Peel plantains and cut into two/per plantain
  • Put in a pot and add water to surpass the plantain level
  • Put on the fire and cook until its ready
  • When the plantains is ready, remove and put in a thermos flask
  • Now serve the sauce de porc and plantains in a plate and eat hot
  • Don’t forget to drink water after eating and don’t cut off your fingers for those eating with hands as this meal is delicious
  • Enjoy your meal.

NB. Porc is the French spelling of pork.
