Ifishashi is a zambian dish, that is prepared from green plant leaves and it can be mixed with most of the foods in Zambia.
Zambia has a lot to give, it is a country found in Africa with various tribes speaking Bantu language. Those tribes are the Nyanja-Chewa, Bemba, Tonga, Tumbuka, Lunda, Luvale, Kaonde, Nkoya and Lozi.
Ifishashi may do better with rice or being mixes with a fish or meat. Many do like it when mixed with fish because of the taste especially eating with stiff porridge or rice. I welcome you to join this session of Ifishashi preparation from Zambia.
- Prepare pumpkin leaves, about 1/2 kg.
- Grinned groundnuts. (soft and well grinned)
- 2 Bulb onions.
- 2 Tomatoes.
- 1 Carrot.
- 1 green pepper.
- Wash well the leaves as they trap a lot of dusts and sands.
- Chop them or cut into very small pieces as normal. Put in clean plate.
- Wash tomatoes, carrots, green pepper and onions, cut into favorable pieces. Put in another clean plate.
- Take cooking pan and start to fly onions, then after 1 minute add green peppers and carrots, fry for total of 3 minutes.
- Add tomatoes and salt, keep fry for 30 seconds and close the pot to boil the mix.
- Add leaves and mix them all together after about 3 minutes of boiling tomatoes.
- Count on 5 minutes and open up the pot, add grinned groundnuts, stir it with the mix, add little soup to mix, close the pot and keep boiling for 3 minutes more.
- After the countdown end, take off the pot. Our very delicious meal is ready for breakfast, lunch or dinner.
