Pakistan – Traditional Lahori Chargha With Green Chili Yogurt Dip (Hara Raita)

Introduction

Lahori charga is one the most famous and eatable dishes in Pakistan. People come from different cities to enjoy this delicious meal. Charga is a whole fried chicken which has a lot of spices in it which give the whole meal a special taste. This is also very famous because of its name. You can serve this at any function. This is the specialty of Lahore. All the people should try this once. There are different ways of cooking Charga like.

  • open fire-cooked charga

You can eat this alone or you can eat this with naan or rice. People like to have this with naan. This is very similar to roast which is also very famous in Lahore. Food streets are full of this delicious dish. The aroma of this dish is so mouth-watering. This dish is a must at weddings. This is not difficult to make. Restaurants serve this in around plate with having portions. These portions include.

Ingredients of making charga

  • Whole chicken
  • salt 1 tbsp
  • red chili powder 1 tsp
  • red chili flakes 1/2 tsp
  • black pepper 1/4 tsp
  • turmeric 1 tsp
  • star anise 2
  • cardamom seeds 1/8 tsp
  • dry coriander 2 tsp
  • cumin 1 tsp
  • green chili 2
  • lemon juice 3 tbsp
  • yogurt 1 cup
  • cream 4 tbsp

Method of cooking

Step 1

Take a large bowl and add the whole chicken, yogurt, cream, lemon juice, coriander, cumin, turmeric, black pepper, red chili powder, red chili flakes, black pepper, salt, and cover it and leave it aside for 5 hours. Mix well. Now take another bowl and take 5 tbsp of water and add the star anise, cardamom, and green chili and keep it aside for 12 hours.

Step 2

Now take the chicken bowl and take the water bowl remove the cardamom and star anise and the water and chili to the chicken bowl. Now take a large cooking pot and add 5 cups of oil. Heat the oil for 15 minutes and then add the chicken to the oil and fry until golden brown.

Ingredients of yogurt dip

  • Yogurt 2 cups
  • salt 1/2 tsp
  • green chili paste 1 tsp
  • mint paste 1 tsp
  • black pepper 1 /2 tsp

Method of making

Step 1

Take a large bowl and the yogurt, slat, black pepper, mint paste, green chili paste and mix until all the ingredients are combined.
