Pakistan – Traditional Kheer (Rice Pudding)

Introduction to the dish

Kheer is one of of the unique dessert in Pakistan. It is served on eid and any other occasion like parties, gatherings etc. It is also served on iftari in ramzan. Kheer is vermicelli pudding prepared by adding milk, vermicelli, khoya, saffron, ghee and dry fruits. It is cooked using a big amount of milk, dates and a variety of dry fruits to add more flavor to it and make it aromatic dessert. It is well known dessert in Pakistan. It is a sweet milky dessert and can be served hot or cold.

Kheer is a part of the mornings meals. It is a combination of roasted vermicelli and milk. This special dish is served on eid mornings. It is very popular in Indian subcontinent and central Asia. In winters you can eat it hot and in summers you can eat it cold. Some restaurant add kulfi (ice cream) in the kheer to make it more flavorful. You can find this yummy dessert at roadside.

Ingredients

  • milk 350 ml
  • vermicelli (roasted) 150 g
  • sugar 1 cup
  • dates 5 to 15 
  • raisins 10 to 15
  • almonds 1 cup
  • ghee 1/2 cup
  • saffron 1/2 tsp
  • cardamom powder 1 tsp
  • Vanilla extract 2 tsp

Method of making kheer

Step 1

Take a pan and pour ghee, almonds, raisins and dates in the pan ans saute for 5 minutes.

Step 2

In another pan add the milk and boil for 10 to 15 minutes and then add sugar.Now in other pan add vermicelli and roast it for 5 or 8 minutes.

Step 3

Add dry fruits and saffron to the vermicelli.Mix well and add cardamom powder and vanilla extract.In a large pot putt the milk into it and add the vermicelli.

Step 4

Serve chilled and garnish it with some almond, pistachios, dates and whatever you like.
