Pakistan – Traditional Gol Gappay

Introduction

Gol gappy is a combination of crispy round papri, boiled potatoes, vegetables and imli ki chutney (tamarind dip). Gol gappa literally means ”water bread”. It is a common snack in Pakistan. The flavor of it is very unique and delicious. You can eat it as a snack or you can serve this to the parties like an appetizer. The round papri is made from whole-wheat flour and semolina. Eating a gol gappa is an art. Once the crunchy papri dipped in the chutney (dip) eat it quickly. Gol gappay is also known as pani puri. It is a bit size snack. They can be found all over the country at roadside and snack bars.

In English it can be said water balls with stuffing in it.In Pakistan it is not difficult to find. Gol gappay is famous because of it sweet, salty, spicy and sour taste. There are different king of chutney (dip) for gol gappay. Meethi chutney ( sweet dip) is made from dried appricots and plums. Khati chutnry (sour dip) is made from tamarind.

Ingredients

  • semolina 1/2 cup
  • flour 1 cup
  • salt 2 tsp
  • tamarind 150 g
  • water 3 cups
  • green coriander 1 tsp
  • green chili 5
  • ginger 1 tsp
  • oil 2 cup
  • baking soda 1 tsp
  • sugar 1 tbsp
  • chaat masala 2 tbsp
  • black salt 1 tsp
  • lemon juice 2 tbsp
  • mint 20 g
  • yogurt 1 cup
  • roasted cumin 2 tsp

Method of cooking

Step 1

Take a large bowl, add semolina, flour, salt, baking soda,lukewarm water and mix well.Now cover the bowl for 1 hour.

Step 2

Now make a small round chapati and fry them until golden grown.

Step 3

Take another bowl and add tamarind water and soak for 30 minutes.

Step 4

In a pan add tamarind paste, water, sugar and cook for5 to 10 minutes on low flame.Sour sauce is ready.

Step 5

In a grinder add water, mint, green coriander, green chili, ginger, salt,roasted cumin,black salt, chaat masala and grind it.Green sauce is ready.

Step 6

In a bowl add sugar, yogurt, salt and mix it well.Yogurt sauce is ready

Step 7

Now fill the gol gappay with boiled potatoes, onion, tamarind sauce, green sauce, boiled chickpea.

Enjoy.
