Pakistan – Traditional Cholay Bhaturay (White Chickpea With Deep-fried Bhaturay and Vegetable Raita)

Introduction

Cholay means white chickpea and bhaturay is kind a of naan. Cholay are very delicious and famous dish in Pakistan. Cholay is made in a thick and creamy gravy. Lahori cholay bhaturay is one of the famous snack and breakfast in Pakistan and also in India. The texture of cholay is creamy and thick the flavor is spicy, the texture of bhaturay is soft and light, the texture of raita (sauce) is creamy and the vegetables are crunchy and the flavor is salty and sweet. In Lahore, people wait for a long time to get this delicious dish. The parts of this dish are.

This is the most famous and delicious breakfast in Pakistan. Some people also eat this dish as a lunch or snack. This has a Smokey flavor to give it a special aroma. This is very different from other dishes. The bhaturay has yellow lentils inside it that go very well with cholay (chickpea). This is dish is always served to parties, weddings, and to guests to impress them. The name of it unique but the flavor is different from all the dishes. This is served in a special plate.

Ingredients for making cholay(chickpea)

  • Cholay (chickpea) boiled 1 kg
  • yogurt 1 cup
  • cream 5 tbsp.
  • salt 1 tsp.
  • red chili pepper 2 tbsp.
  • red chili flakes 2 tsp.
  • ghee 1/2 cup
  • turmeric 1 tsp.
  • coriander 2 tbsp.
  • green chili 4 (chopped)
  • black pepper 1 tsp. (crushed)
  • water 3 cups

Method of cooking

Step 1

Take a large cooking pot and turn the heat on then add chick pea, salt, water and bring it to a boil and then cook it for 15 minutes. Now take a pan and add the ghee, yogurt, red chili powder, red chili flakes, turmeric, coriander, black pepper, and roast the spices on low flame for 15 minutes and mix well.

Step 2

Now put the spices in the cooking pot and mix well until the spices are combined with chickpea. Then add the yogurt in it and cook for 20 minutes and cover the lid. Now take the green chilies and in the pot and again cook it for 15 minutes when the smooth consistency if formed take it out in a plate and turn the heat off.

Ingredients for making bhaturay

  • plain flour 2 cups
  • wheat flour 1 cup
  • ghee 1 cup
  • salt 1 tsp
  • water as needed
  • yeast 2 tbsp.

Method of cooking

Step 1

Take a large bowl and plain flour, wheat flour, salt, yeast, ghee and water you needed and mix until the dough is formed and minimum knead it for 25 minutes. Then cover it and keep it aside for 3 hours.Now make small bowls of dough and roll it with the rolling pin then place a tbsp of butter on the bhatura and again make it a ball. Now roll it again until 1 inch chappati is formed.

Step 2

Now take a deep pot and turn thee heat on and then fill half of it with oil and put the bhatura in the oil and fry it until golden brown .Now place it on a piece of tissue

Ingredients for making raita

  • yogurt 2 cups
  • cream 1 cup
  • salt 1 tsp
  • cucumber 1 chopped
  • capsicum 1 chopped
  • onion 1 chopped
  • tomatoes 2 chopped

Method of cooking

Step 1

Take a bowl and add the yogurt and cream and keep it in the fridge for 1 hour. After 1 hour add the remaining ingredients in the yogurt and mix well.
