Pakistan, India, Bangladesh – Traditional Chicken Malai Boti with Garlic Naan and Pudine Ki Chutney

Introduction

The meaning of boti is ”bits and pieces’ and it refers to the meat,that is cut into small pieces and bake in tandoor.While cooking butter or oil brushed over the chicken to make it tender.It is prepared by marinating the chicken and bake it in tandoor.

It is served with garlic naan and pudine ki chutney (sauce).you can serve this in parties.All the people make this on eid -ul – azha.Countries like Pakistan,India,Bangladesh and other countries are more culturally than different,and the availability of spices,meats,vegetable has play a key of role in the evolution of the subcontinental cuisine.

the role of naan in a meal is quite similar to that of the chapatti. some people get their naan brushed with ghee or butter to give it an added taste. you can eat naan with any kind of tikka.

pudine ki chutney is a delicious spicy condiment.the coriander leaves additional flavor to the chutney.you can eat this chutney with tikka,sandwich,drumsticks,kachori etc.

Ingredients

  • chicken (boneless) 500 g
  • salt 1 tsp
  • lemon juice 2tbsp
  • almonds 10
  • yogart 4 tbsp
  • cream 1 tbsp
  • green chili 7
  • garlic 4 cloves
  • ginger 5 g
  • red chili powder 2 tsp
  • ground cumin 2 tsp
  • ground coriander 3 tsp
  • garam masala 1/4 tsp
  • oil 4 tbs

Method of cooking

Step 1

Cut chicken breast into small cubes and add salt and lemon juice to it.

Step 2

Add almonds,yogurt,cream,green chili,garlic,ginger,red chili powder,ground cumin,coriander and garam masala to a blender and puree to a smooth paste.Add paste to the bowl with chicken and let marinate for 3 to 4 hours.

Step 3

Add oil to a frying pan on low flame and fry chicken until cooked through.Alternatively, you can thread the chicken on skewers and fry them on all sides.Serve this with garlic naan and pudine ki chutney

Ingredients for making garlic naan

  • Plain flour 2 cups
  • baking soda 1 tsp
  • baking powder 1 tsp
  • salt 2/4 tsp
  • yogurt 1/2 cup
  • garlic (grated) 1 tsp
  • water for kneading

For garlic butter

  • Butter 3 tbs (melted)
  • garlic 1 tsp (grated)
  • coriander 1 tsp

Method of cooking

Step 1

In a large bowl put plain flour,baking soda,baking powder and salt and mix well.

Step 2

Add oil,yogurt and garlic.mix well make sure everything is well combined.

Step 3

further,add water as required and knead to soft dough and let it set for 2 hours.

Step 4

for garlic butter,add butter,garlic,coriander in a bowl and mix well.

Step 5

after 2 hours, knead the dough slightly to remove if any air is present in the dough.gently roll to oval shape using a pin.don’t make it too thin or too thick.

Step 6

put the naan dough on tawa and cook it for 2 or 3 minutes until golden brown on each side.brush the naan with garlic butter.

Ingredients for making pudine ki chutney (sauce)

  • Chopped mint leaves 1 cup
  • chopped coriander leaves 1/2 cup
  • garlic 4 cloves
  • green chili 5
  • garlic piece 1/4 inch
  • lemon juice 2 tsp
  • water 2 tbsp

Method of cooking

Step 1

Take garlic,chili,ginger and salt in a small blender.grind until smooth consistency.add coriander leaves,mint leaves,lemon juice and water.grind again.

Step 2

delicious mint chutney is ready.
