INTRODUCTION

So this dish is very popular street food of Pakistan and India. It is also known as Bun Kabab. The main ingredients used in this dish is famous Pakistani Shami kabab along with spiced omelet and salad in the bun. It is eaten as a regular street food, specifically, in the Indian cities and Pakistani cities like Lahore, Karachi etc. This popular street food bun kababs or anda shami burger usually sold from roadside stalls, side street hawkers, and fast food restaurants, usually made my mothers at home for lunchbox and evening snacks for their kids, a plate with fries on the side along with this easy and tasty bun kabab and ketchup to enjoy the evening. A fried version of the bun kebab is popular in Lahore known to be as BUN PALASTER. Actually the burger is prepared having shami kabab, salad, egg, ketchup than the whole burger is fried in the butter or oil amounts of butter, spices and tender or paste like kebab mixture used in it. They are also commonly known as anday wala burger/ bun kabab/ anda shami burger or bun palaster. Bun kebab patties also called shami kababs are composed of ground beef or mutton, yellow or red lentils, powdered spices, and an egg batter. The patties are fried in ghee/ butter.

HISTORY

As the popularity of this dish in India and Pakistan. It is most popular street food and can be enjoyed by every Pakistani in the world. Bun Kebabs are the traditional and addictive specialty of street food in Pakistan, and especially, Karachi.

INGREDIENTS

  • 1 kg Beef/ chicken/ lamb Boneless
  • 1 Medium size Onion chopped
  • half inch ginger
  • 1 Cloves Garlic
  • 1 tsp garam masala
  • 1 Tsp Zeera (cumin seeds)
  • 1 tsp Salt
  • 8 red chillies
  • 1 cup Channa Daal
  • 2 Tsp Ginger finely chopped
  • 4 Fresh Green Chillies
  • Coriander Chopped
  • Mint leaves Chopped
  • Egg for fry Kabab
  • Burger buns 4
  • Mayonnaise 1/2 cup
  • Green chutney 1/2 cup
  • Onions sliced for salad
  • Cabbage Julian cut for salad
  • Eggs for omelete
  • cheese sliced 8
  • ketchup 1/2 cup
  • potato for fries

METHOD

  • Take meat along with onion, garlic ginger and salt , chilies with 3 glass of water and let it cook on high flame in pressure cooker for 10 minutes so the water is dried completely and meat is properly cooked
  • Boil the channa dal with having salt in it
  • When meat is cooked add this cooked daal and let it set for 15 minutes on slow heat
  • Now chop or grind a mixture, After that add garam masala , fresh coriander, fresh mint leaves, green chillies , Mix well and make round cutlet type kabas
  • Beat eggs add salt, red pepper, onion, green chilies, tomatoes into it and fry the omelete
  • Now coat the kababs/ cutlets in simple beaten eggs and shallow fry them until golden brown
  • Heat up the pan and warm the bun on the pan by adding little oil or butter .
  • Then spread prepared kababs/ cutlets on the one side of bun and on the other spread mayoniese also add cabbage leaves and onion on the bun and served it with ketchup and fries
