Nepal – Kwati

INTRODUCTION

Kwati is a “STEW”. It is a “HOT SOUP” which is made by mixing different beans. This is one of the most special hot soups of Nepalese cuisine. You can mix any type of beans in it and make the spiciest and delicious soup to eat. You can enjoy this anytime but it is mostly used before the meal because this is the appetizer.

This is a very healthy soup so that every person in the world should try this soup, especially in winters so you can be healthy all the time.

GUNI PUNHI FESTIVAL

This hot soup is very important because one of the festivals of Nepal is incomplete without this stew which is known as ” GUNI PUNHI “. Guni Punhi is the festival of Nepal in which Guni is the tenth month of NEPAL LUNAR CALENDAR, at this day the moon is full, and Nepalese celebrate this day as their festival. Guni Punhi is incomplete without this Hot soup which is known as KWATI. This festival always occurs in the month of AUGUST.

RECIPE

INGREDIENTS

  • fennel seeds 1/4 tablespoon
  • garam masala 1 tablespoon
  • turmeric 1/2 tablespoon
  • cumin seeds 1/2 tablespoon
  • onion 2
  • fenugreek seed 1/2 tablespoon
  • mustard seeds 1/4 tablespoon
  • garlic paste 1 tablespoon
  • ginger paste 1 tablespoon
  • thyme seed 1/4 tablespoon
  • lovage seeds 1/2 tablespoon
  • cinnamon bark only 1
  • tomatoes 1
  • coriander powder 1 tablespoon
  • bay leaf only few
  • canola oil 2 tablespoon
  • red chili powder 1/2 tablespoon
  • mustard oil 4 tablespoon
  • salt 1 1/2 tablespoon

METHOD

First thing is you have to soak the beans overnight in the water so it is more good to have the stew of it.

Now take a pan and add all the masalas in it and fry them in the oil

Now add the beans in the oil as well and cook them for more minutes.

Add 6 cup of water in the pressure cooker and add tomatoes with all the masala’s ingredients.

Heat them and at last your soup is ready.
