Nepal – Kachila

Kachila is the minced meat of buffalo which is made full of spices.
Kachila is one of the best dish of Newari cuisine because it is famous due to their taste and region also. Kachila is famous as Choila of Newari foods. Kachila is famous in the whole world not because of their region only but due to their taste and ingredients. This is a very special dish of Nepal. Some people called this dish “WEIRD NEWARI DISH“.
The choosing of spices is very important in this dish because this dish totally depends on the choice of ingredients, the more tasty ingredients the more tasty dish.
kachila is also known as “Kacho Masu”
DERIVATION OF WORD
kachila is the combination of two words ”kachyu” and “laa”.
- Kachyu” means raw or fresh
- “la” means meat
Newari community is a very famous community and is also considered the richest community of Nepal.
TASTE AND TEXTURE
It is soft in texture and has a spicy taste because we mixed some spices in the soft minced meat. Meat must be soft and smooth so it blends well and give you a very smooth texture of everything that you eat with.
This dish is basically related to the taste of Newar people. It is sad that the actual resident of Nepal is half who resides in the Kathmandu valley of people. In this era, the people who reside in Nepal are the residents of different areas but not the actual resident. Most people are residing in

you can serve this dish with
- boiled rice
- simple creamy yogurt
- apricot sauce
you can use this dish in many things like
- you can filled momos with this kchila
- kachila used as a filling in samosas
- you can add this in the pasta or noodles
- you can add up in the simple rice
Kachila is garnished with
- Focaccia Toast Bread
- Egg yolk
- Water Cress
- Pickled Radish
- Lime Wedges
- miced meat : 1 kg
- onions : 2
- garlic : 1 tbs
- ginger : 1 tbs
- turmeric : 1/4 tbs
- carrots : 3
- fenugreek seeds : 1 tbs
- ccumin seeds : 1/2 tbs
- coriander powder : 1 tbs
- fresh coriander : few leaves
- red chili powder : 1/2 tbs
- salt : 1 1/2 tbs
- Add oil in the pan.
- Put spices in it and fry them
- now add chopped onions in it .
- fry garlic and ginger in the oil.
- put minced met in the pan along with spices.
- leave it for half an hour.
- your kachila is ready.
