Malaysia – Chee Cheong Fun

There is nothing more enjoyable than eating dim sum in cold weather. A delicious dish from China, serve warm, smooth, and umami taste. Dimsum becomes popular in many countries. Its simple taste makes it fit our tongue. In some countries, they modifying dim sum base on their resource and tradition like what Malaysia did. Malaysian people make their own style of dim sum with their unique spice and ingredient. They call it Chee Cheong Fun.
Chee Cheong Fun is a classic Malaysian dim sum, served in any Kopitiam (traditional coffee and breakfast shop). Chee Cheong Fun has a long tube shape with a chewy and pliable texture. Its shape and texture make it different from other dim sums that use a round shape and dense texture. Malaysian people make Chee Cheong Fun using rice flour mix with starch, water, and salt. To create a good Chee Cheong Fun texture, we need to manage the mixture thickness. The bamboo steamer also needs to layer with a thin cloth.
Chee Cheong Fun serves with a top of fried shallot, sesame, and pour with its special sauce. For the filling, they use shrimp, beef, or vegetables. Usually, Malaysian people eat Chee Cheong Fun accompanied by a cup of Oolong tea or Tarik tea. Making Chee Cheong Fun needs extra passion since you need to roll the mixture carefully and several times.

- 200-gram rice flour
- 20-gram tapioca flour
- 20-gram cornstarch
- 2 teaspoon salt
- 700 ml of water
- 6 tablespoon cooking oil
Filling and garnish
- 200 gram peeled shrimp
- 5 stick of scallion, sliced
- Fried shallot
- Roasted sesame
- 8 tablespoon of warm water
- 2 tablespoon sugar
- 6 tablespoon of salty soy sauce
- 2 tablespoon sesame oil
Tarik Tea ingredient
- 2 small bag of tea
- 1/8 teaspoon of salt
- 50 ml of milk
- 150 ml of water
- 50 ml condensed milk
How to make Tarik Tea
- Boil tea with water
- Add milk, salt, and condensed milk in a stainless steel glass.
- Add the boiling tea to the glass. Adjust the taste with sugar
- Pour into a shaker. Shake until bubbly
- Place in a drinking glass
- Mix all the sauce ingredient
- Adjust the taste with salt and sugar.
How to make Chee Cheong Fun
- Mix and blend all Chee Cheong Fun ingredients.
- Use heat resistant and flatten container, rub with oil.
- Pour the mixture, thin-flatten it to all the surface.
- Steam for 2 minutes. After 2 minutes, add scallion and shrimp in the middle part.
- Steam again for 2 minutes, pick and roll.
- Repeat the process for all the mixture.
- Pour the sauce. Add fried shallot and roasted sesame.
- Chee Cheong Fun ready to be served with a glass of Malaysian Tarik tea
