Kakigori is a dessert that is made up of Crushed and shaved ice with having flavors and sweet syrups. Japanese Shaved ice dessert is served with sweet syrups, some fruit chunks, condensed milk, evaporated milk. Sweet fruit syrups are added to get that flavored dessert. The cream is added to give richness to the dish, condensed milk for authentic Japanese flavor, and crushed shaved ice for the fluffiness and mouth-melting texture.
In summer, this dessert is sold every where in Japan like, dessert shops, tea café, tea stalls, ice cream stalls, etc. This icy treat is best for the snacks, dessert and to admire the summer while having this treats on your hands.
This dessert is so versatile, it has only one main element that is shaved ice. Now you can add favorite fruit syrups, fruit chunks, condensed milk, sprinkles, some brownie, cookie, etc. This dish is yours, you can make it like you want to make it.
VARIETIES OF THE DISH
Baobing is the Chinese shave ice dessert. It is also known as Tsuabing. It is the shave ice dessert, served by adding strawberry syrup, condensed milk, adzuki beans, tapioca beans, and mung beans.
There are two main favorite flavors of this dessert, like mango and strawberry.
Bingsoo is the famous dessert of Korea. It is also known as PATBINSOO, because it is topped with red beans. It is the crushed ice that has overloaded condensed milk, fruit sweetener, and red beans.
It has other varieties in which coffee and green tea can be available, that is served with ice cream.
This dessert is from Indonesia. This is known as Mixed ice. It has many tropical elements like:
- Fruit cocktail
- Grass jelly
- Tapioca pearls, etc
Ais kacang is Malaysian dessert, very famous in Singapore. This is known as Beans Ice. It is served with the following toppings:
- Red beans
- Attap chee
- Sweet corn
- Grass jelly
- Aloe Vera, etc.
Grattachecca is the Italian Dessert, it is crushed ice that is flavored of sweet Scrioppo. It is served in glass, in which ice is melts and you can drink it in a way.
HISTORY OF THE DISH
This dish is originated in Heian Period in which ice from the mountains bring and topped with flavors. At that time, it is served with fruits, sugar and other elements like beans etc.
ELEMENTS OF THE DISH
A machine is used nowadays from which ice is shaved and crushed like a snow. It is known as ”Cranked Machine”. The block of ice is placed over the sharp blade that spins and convert the ice into shave form like a snow. In old days, snow is collected from mountains and then different flavors are added and served.
This machine is also known as snow maker.
Fruits that are very famous for Kakigori are:
- Melon, etc.
Fruit syrups are the main element to get flavors and sweetness. This is used so it may infused with ice and make it flavorful.
Shirokuma is a dish that is similar version of the kakigori but having addition of ricecakes, mochi, oranges, cherry, pineapple and azuki beans.
INGREDIENTS OF THE DISH
- Shaved ice: 3 cups
- Condensed milk : 1 cup
- Strawberry syrup : 1 cup
- Evaporated milk : 1/2 cup
- Whipped cream : 1 cup
- Mango chunks : 1/2 cup
- Cherries : 1 cup
- Pineapple : 1/3 cup
- Strawberry : 1/2 cup
METHOD OF MAKING
- In a bowl add shaved ice and 4 tablespoons od condensed milk.
- Add fruit chunks with some fruit syrup.
- Now add evaporated milk, and whipped cream
