Filipino – Chicken Embutido

ABOUT THE DISH

Embutido is a Filipino dish which is basically a meat loaf made usually with ground pork and beef but in many cases chicken is used to make it hence calling it Chicken Embutido. Like the pork the chicken is grounded and then mixed with some vegetables like carrots , onions. chilli peppers and more. Along with this eggs are also included to make it. Once the meat is prepared it is rolled in foil sheets and cooked in a steamer. In Philippines this dish is considered as sausages because the food culture there revolves around chorizo and other sausages so they consider it also a sausage. It is a dish famous for a festive season like Christmas and has a lot of demand in the streets of Philippines. There are many restaurants that serve these sausages and have a unique flavor to it. It is very easy and simple to make and do not require many complicated ingredients. it is served both hot and cold and usually there is a dipping sauce served alongside it which elevates the flavor of this dish. The people of Philippines love this dish as it has a rich history behind it and now has taken its place in the culinary books of the Philippines food.

ORIGIN AND HISTORY

The origin of Embutido ages back to the time when the Philippines was colonized by the Spain for more than 3 centuries. This dates back to the start of the 15th century. At those times the Spanish people who came to the Philippines brought their own traits with them and merged them with the ways of the Filipinos. This meant they both inherited each other cultures and mostly each other styles of cooking and dishes. Among these dishes there were many sausage dishes which became popular among the Filipino people. These dishes were chorizo which is still very much popular and also there was Embutido. The people of the Philippines inherited these dishes and added their own flavors in them. It is due to this reason why Embutido is considered to be in the category of sausages in the Spanish culture.

Like many dishes before it Embutido was changed drastically towards the time as the people of the Philippines wanted to add their own flavors in it. So as the time passed by they added their cultural food like pork in it and made it a pork inspired dish. Before this meatloaf was made with ground beef but later was changed to pork and up till now it is famous like this.

SIMILAR DISHES

Embutido is similar to another dish of the Philippines cuisine. That dish also sausage type dish and the same history as Embutido. It was also introduced by the Spanish people to the Filipino people. This dish is called Morcon. They both look identical but there are different from each other. Morcon is made by adding eggs together with beef and then it is fried rather then steamed. That is why they are similar yet different from each other.

INGREDIENTS REQUIRED TO MAKE THIS DISH

  • Olive oil 1/4 cup  
  • Ground chicken
  • Eggs 3
  • Tomato sauce
  • Onion 1   (minced)
  • Raisins 1 cup
  • Red and green bell pepper  1 (minced)
  • Carrots 1 cup  (minced)
  • Sweet relish 1/4 cup
  • Cheddar cheese 3/4 cups
  • Bread crumbs 1 1/2 cups
  • Salt 1 tsp 
  • Pepper 1/2 tsp

SPECIAL EQUIPMENT REQUIRED

  • Steamer (wooden or anything else)

STEPS TO PREPARE THIS DISH

  • To make the sausage rolls we need to first prepare out chicken.
  • Take the ground chicken in a bowl.
  • Add the minced carrots in it firstly.
  • Then add the minced red and green bell peppers.
  • Then add onions which should also be minced.
  • Mix regularly.
  • Then add the raisins and the sweet relish.
  • Mix again.
  • Then add the cheddar cheese and also the tomato sauce.
  • Mix fully again.
  • Add some olive oil and mix again.
  • Add salt and pepper and mix again.
  • After this add 3 eggs in the bowl.
  • Before mixing also add the bread crumbs.
  • Finally mix for the last time.

STEPS TO COOK IT

  • Take a foil sheet and place the chicken mixture in the shape of sausage.
  • Roll the sheet fully with the mixture inside it.
  • Place it in a hot steamer and let it cook.
  • Once cooked take it out and plate it.
  • Your dish is ready.
  • Enjoy
