Chad – Daraba

Chad is a country located in the north-central of African Continent. The country borders Libya in the north, Niger and Nigeria in the west, Cameroon on the west-southern part and Central African Republic to the south, as well as Sudan to it’s east.

Chad brings us the most nutritional dish called Daraba which is the stew of veggies, cooked together for a better taste.

The stew comprises of okras, tomatoes, onions, carrots, sweet potatoes, aubergines, spinach and peanut butter.

Although it’s easy to carry on the whole process easier, still there is some hints to consider for whole.

Some like it without peanut butter, this again requires a little longer when frying the okras, while using peanut butter may save time when frying.

Spinach mix may give a taste too, so try it and taste the magic. You will be required to collect some ingredients before jumping to cook, here are the procedures to guide you all along the cooking session, welcome.

Prepare

  • 5 okras
  • 1 sweet potato
  • 2 bulb onions
  • 3 carrots
  • 5 tomatoes
  • 1 aubergines (Egg plant)
  • 1 small piece of bouillon
  • salt
  • pepper and cayenne pepper

Cooking procedures to follow

  • Wash okras, carrots, onions, tomatoes and aubergines, chop them into small sizable shapes. Tomatoes may be blended if possible or chopped into very small pieces. Potatoes and aubergines may be with same size to Okras. The good thing is that vegetables let’s you choose your favor.
  • Heat up a cooking pan and put in oil. Start to fry onions, okras, aubergines and potatoes for about 5 minutes less.
  • Add tomatoes, carrots, spinach and salt. You may add peppers at this stage if it’s your favor. Boil up for 5 minutes while stirring. Add some water for soup and boil for 3 minutes under high heat.
  • Add peanut butter and lower heat to moderate, mix the butter well and boil for 5 minutes less. It’s also a step to check for salt.
  • After the time check to see if Okras are ready, this is due to the fact that Okras differ to their hardness. Keep boil until they are tender.
  • Daraba cuisine is ready, serve with rice, bread or porridge. Enjoy with family or friends.
