Cameroon – Yellow Garri With Stewed Eggs and Green Beans

Yellow garri with stewed eggs and green beans is a meal coming as the result of the manufaction garri from the production of cassava stick locally known as manioc. There are two existing types of garri, the yellow garri and the white garri. Most people like eating the yellow garri because it can be eaten without necessary cooking just with a cup of cold water and sugar and you the possibility of enjoying your cold yellow garri with sugar and groundnut if you want. In this our case, it will not be the same thing. We will concentrate in the cooking of yellow garri with stewed eggs and green beans. This food comes from the North Eastern part of Cameroon, precisely the Wum inhabitants.

Cooking method

The cooking method used in the preparation of Garri with stewed eggs and green beans is that of boiling and stewing.

Cooking ingredients

  1.  Three cups of yellow garri
  2. Five eggs
  3. A handful of green beans
  4. A cup of groundnut oil.
  5. Salt to taste
  6. Maggi to taste
  7. Yellow pepper for more tasting
  8. Two fresh tomatoes
  9. A handful of garlics
  10. A handful of white pepper.

Cooking process

  1. Wash the fresh tomatoes with clean water.
  2. Wash the green beans with clean water.
  3. Wash the white pepper with clean water.
  4. Remove the peelings off the garlics.
  5. Wash the green beans with clean water.
  6. Having washed out all the dirt from the ingredients, chop them into very small pieces.
  7. Make sure not to grind them, just chop them.
  8. Having prepared all the ingredients and chop them together, what you have to do next is to pour groundnut oil on a clean frying pan and put on fire.
  9. Mix the eggs with green beans, the tomatoes, onions, white pepper, adding salt and maggi altogether.
  10. After putting the groundnut oil on fire, throw into the pot the mixed ingredients and eggs. Stir for about five minutes. After five minutes, remove the stewed eggs and green beans on fire.
  11. Proceed with the boiling of the yellow garri.
  12. Put water in a pot and put on fire.
  13. Allow the water on fire for about fifteen to twenty minutes.
  14. In the meantime, put the garri in a clean bowl.
  15. Pour the hot water into the bowl of the yellow garri and stir the garri very well till you notice that it has become soft. Close the bowl of the yellow garri with a very good cover.
  16. Allow it closed up for about twenty five minutes to thirty minutes.
  17. After this time set, the food is ready.
  18.  Serve the food on a flat plate altogether like in the picture below.
