Cameroon – Huckleberry and Chicken Gizzard With Fried Plantains

Huckleberry is a meal or accompaniment that can be eaten with so many different varieties of foods which includes; fufu corn, rice, boiled plantains both ripe and unripe plantains, sweet yams, white yams, Ibo coco, macabo, Irish potatoes, sweet potatoes, fried plantains and even achu. This thus makes vegetable if not entirely but can be termed a meal for many varieties or an accompaniment to all. Chicken gizzard on the other hand is that part of chicken that is considered as a special part which most people call it the king part in chicken which is believed to be eaten only by the male gender or by the mother of the house in a case where there is no father or male children in that house. Back in the days it was a taboo for a woman to eat gizzard so when preparing chicken, gizzard will be saved specially to the father or given to elderly males in the house, but gone are those days as such believes have been wiped out and anyone can eat chicken gizzard be it male or female and even kids too. Huckleberry and chicken gizzard with fried plantains is a very delicious meal which is also very nutritious

Cooking method

Huckleberry and chicken gizzard with fried plantains is prepared boiling and frying

Cooking ingredients

  • A kilogram of washed huckleberry that is around 6-7 balls of washed huckleberry
  • 3 large fresh tomatoes
  • 2 large onions
  • A kilogram of chicken gizzard or half a kilogram depending on the budget
  • Two large carrots
  • 5 grains of garlics
  • Groundnut oil
  • Green pepper
  • Fresh hot pepper
  • Ripe plantains
  • Maggi and salt to taste

Cooking process

  • Clean the chicken gizzard, slice them and wash. Put in a pot and add a cup of water. Add some maggi, salt and onions and take to the boil. Allow to boil for 20-30 minutes
  • Slice carrot, onions, tomatoes, green pepper separately and keep aside. Peel garlics and chop thinly and keep aside
  • When the gizzard is done, remove and drain and keep aside. Add the carrot to the gizzard stock and boil for 3 minutes, remove and keep aside
  • Mix the huckleberry balls with salt and maggi so that it should taste well
  • Heat the groundnut oil and when it’s hot add the sliced onions and tomatoes and fry until it’s done
  • Now add the huckleberry, boiled gizzard, green pepper, chopped garlics and stir well using a wooden spoon. When the mixture is homogenous, allow to cook for 5 minutes and then add the boiled carrots. Allow to cook until water dries off. The huckleberry is ready
  • Now peel the ripe plantains and sliced into desired shape and size
  • Put half a litter of groundnut oil on the frying pan and allow to heat
  • When the oil is hot, put the plantains in the frying pan and fry until its brown
  • Remove and put in a strainer to drain excess oil
  • Repeat the process until the plantain is finished
  • Now save the huckleberry and chicken gizzard with fried plantains in a plate and eat it warm
  • Enjoy your meal
