Pakistan – Kachoori

WHAT IS KACHORI?

Kachori is a snack usually famous in Pakistan on ramzan days. It has crispy crust outside is filled with spiced mince.

Like a puff pastry dough is knead, stuffed with desired flavoured mince and fry to give golden crust over it. It is everyone’s favourite snack on tea time but specially on ramzan bakeries make this kachori of various different stuffing like lamb mince stuffing, chicken mince stuffing, potato stuffing, vegetables stuffing and many more.

Kachori is one of Pakistan’s most popular breakfast in Punjab. Crispy kachoris dunked in potato curry or a special sauce makes you fell in love with it.The crispy golden treat made with aromatic masalas, and served with signature sauce and chutney, is a favourite snack to munch on. Especially on Ramzan, a month of fasting, there are alot of bakeries that made these kachoori of different fillings like chicken, lamb mince, vegetables, some sort of nuts and many more.

Place of Origin

This spicy and traditional snack is originating from the Indian Subcontinent. In India it is assume that it is included in Rajhastani cuisine and here in Pakistan it is known as Punjabi Traditional cuisine.

There are many varieties of kachoori famous here is keemy k kachoori ( mince kachoori ) and chicken kachoori that is usually served by almost every bakeries in Pakistan.

INGREDIENTS

Dough

  • Plain flour: 500 grams
  • Salt: 1 tea spoon
  • Baking soda: 1 teaspoon
  • Oil: 2 tablespoon
  • Water to knead the dough

Filling

  • Lamb mince: 250 grams
  • Onion chopped: 1 small
  • Green chili: 1 teaspoon
  • Salt: 1 teaspoon
  • Chili flakes: 1 teaspoon
  • Oil: 2 tablespoon
  • Coriander powder: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Garam masala: 1/2 teaspoon
  • Chat masala: 1/2 teaspoon

For sauce

  • Green chilies: 4
  • Fresh coriander: 1 bunch
  • Fresh mint: 1 bunch
  • Salt: 1/2 teaspoon
  • Garlic clove: 2
  • Cumin powder: 1/2 teaspoon
  • Yogurt: 4 tablespoon

METHOD

  • Take all dough ingredients together and knead a tough dough with water.
  • To make filling, take oil into pan and add chopped onions into it fry little and add mince.
  • Fry mince with onion for 10 minutes than add all spices with water around 1 glass.
  • Cook on medium heat.
  • When meat is cooked enough and moisture is dried, take pot out of flames and let it cool
  • Now take small ball on dough, roll and add filling into it.
  • Make round shape as kachori have and fry until golden brown crust appears.
  • To make chutney, take all chutney ingredients into blender and blend into paste
  • Serve yummiest kachori with green chutney
  • Enjoy!
